Disgustingly delicious

Sometimes you have a day of eats that makes you go, “hmmm…,” which happened to me yesterday. First up: my breakfast. Here’s a fun fact. Scrambling eggs with avocado before adding to the pan makes your breakfast look like green cat vomit.

Next time, I think I’ll scramble the eggs, add them to the pan THEN add avocado. Despite the ugly green appearance, the combination is still delicious.

Here’s my attempt at moving breakfast near natural light to try to make it look more appealing. Fail.

Later that day Kevin and I were struck by a craving for pizza, but not just any pizza. For some reason, we had a hankering for chain pizza (as opposed to our beloved Anthony’s).

This led us to dining at Pizza Hut. I haven’t been to Pizza Hut since I was way younger and lived in Ft. Wayne, Indiana, when we would go to celebrate the end of soccer season.

We started out with breadsticks, and Kevin ordered pepperoni pizza. I ordered my pizza with sausage, mushrooms and olives.

Why, yes, that is stuffed crust. If you go to Pizza Hut once every 15 years, you need to go big or go home. We had a great time laughing at ourselves over our romantic date night, but I don’t think that craving will be coming up again anytime soon.

After two slices of stuffed crust pizza, it was time to get serious about rejoining a gym. On Saturday, I visited one gym near me, and on Sunday, a second. They’re both really nice (and a lot nicer than the gym I had previously quit).

There’s a pretty big price difference per month between the two ($35), but the more expensive gym does offer more, including group fitness classes (the other offers no classes) and more machines and equipment (kettle bells, stair mills, etc.). Decisions, decisions…

Arrivals and departures

Some people wake up at 6 a.m. on the weekend to get in their morning run. I wake up that early to take GMAT practice tests. Oh, the joys of studying. I was happy to get it out of the way because it seems like we have had such busy weekends lately. I’m less than three weeks away from the big test day!

I don’t think it’s a coincidence that the bulk of the purchases leading up to my Starbucks gold card came after I started studying.

I’m a sucker for reward programs.

Ironically, my first purchase with my new gold status wasn’t caffeinated.

I had an 8 a.m. meeting in downtown Orlando and needed a good on-the-go breakfast, but I didn’t want to be stuck carrying my overnight oats container all day. Starbucks oatmeal is so delicious.

I added in all the available nuts and fruit and omitted using any brown sugar. The oatmeal was delicious unsweetened. Overnight oats has given me a new appreciation for how good the simplest form of oatmeal can taste without any sweeteners.

Gotta love Girl Scout Cookies season!

After waffling for about two years, Kevin and I finally decided to cancel our membership to LA Fitness. We only continued going there out of convenience, and I haven’t been going as regularly due to studying. Most of my workouts have been at home or outside. Kevin started taking TRX classes and playing in different sport leagues, so neither of us were using our gym memberships enough to justify the costs. Plus, it felt like everyone around us was paying cheaper membership rates, and I just haven’t been thrilled with the quality of equipment, staff or crowds. We’re going to see what gym suits us the best after I’ve taken the GMAT. Please send any Orlando gym recommendations my way!

I can’t believe how quickly this past weekend came and went. I was definitely dragging back at work today. On Saturday night, I ventured out for bachelorette party festivities to celebrate my good friend Erica who is getting married next month.

In breakfast news, I’ve reached the end of another jar.

I have to admit that I really didn’t enjoy MaraNatha, but I hate wasting food. I had heard so many great reviews of the almond butter, but I think it’s the added salt that I didn’t enjoy. I don’t put a lot of salt on foods, so I may be more sensitive to the taste than most.

I was excited for some overnight oats in a jar, but I was more excited to move on to the next jar.

So far, I’ve been loving the jar of Sunbutter! I love the texture much more than the no-stir MaraNatha. I think I found a winner!

In a jar

Today was my first day back to work after a glorious 17  days off, and thanks to the cold front moving through, I just wanted to stay curled up in bed all day. Luckily my work day passed quickly and painlessly, and I can look forward to only having three days of work left in the week.

Yesterday, the Gators victory capped off my wonderful holidays. It truly is a new year when we finally win a game! Kevin even picked me up some “game day” orange flowers when he was grabbing groceries at Publix.

We recently picked up the vase from West Elm, and I’m happy to put it to use. I smile every time I glance at the flowers.

I started my day back to work on a high note: my first ever overnight oats in a jar! I have a new recent love: cashew butter.

I’m not a huge fan of peanut butter (shocking, I know…), but cashew butter is milder and has a great flavor. I used to never be able to finish peanut butter jars, but I went through this container in no time: perfect timing for my first attempt at overnight oats in a jar.

Into the almost empty jar went oats, skim milk and nonfat Greek yogurt.

It was the perfect welcome-back-to-work breakfast, and I already have another new try on deck.

Even though it was great to have so much time off, I do feel like it’s easier for me to eat well when I’m at work because I always pack my breakfast and lunch. When I’m at home, I’m more likely to graze, grab food out and make unhealthy decisions. At work, I usually start out the day with overnight oats, assemble a salad for lunch and have a variety of fruit for my snack, and I’m confined to those items, so the temptation isn’t there. It feels nice to detox a little from the holidays.

Post-Christmas

We made it through Christmas! Kevin and I had a two-day extravaganza split between both of our families. I hope you were able to share the season with those dear to you.

Last year, Kevin and I started a tradition where every Dec. 26, we go out to breakfast with just the two of us to decompress. I love that Kevin and I are starting our own traditions, and breakfast on the day after Christmas is just a great way to relax and enjoy each other’s company.

This year, we headed to Christo’s Café in College Park. I ordered two eggs over medium with corned beef hash, biscuits and grits. Their biscuits are some of the best I’ve had in Orlando. They put them on the griddle, so the outside is grilled and crispy and the inside is nice and fluffy.

It was the perfect ending to the holiday weekend.
