Time to veg

Last week Publix pizza dough was BOGO, so Kevin and I made the obvious dinner choice: his and her pizzas.

I topped mine with mushrooms, olives, onions and asparagus.

Kevin baked up his favorite: pepperoni.

Publix pizza dough is so yummy. I also really like their whole wheat pizza dough when I can find it.

After our at-home pizza fest, I had an abundance of leftover veggies, which, combined with the last of some spinach, turned into a delicious veggie omelet.

I think I may have overstuffed the omelet, but all that filling made for some delicious leftovers.

  1. omelets! definitely! or salad. or I’ll put leftover spinach in a smoothie! I’ve been challenging myself lately not to let veggies and fruits go bad, so I’m getting better at this all!

  2. Omelets are a great go-to for leftover veggies! I also like to saute whatever I have left, and throw it into some pasta with sauce.

  3. Salads or veggie bowls! I should really start cooking bigger batches of veggies so they are ready to go for other meals.

  4. I love his & her pizzas! My fave. I always want pineapple on mine!!! I use leftovers by putting them over rice. Isn’t that the way to do it? Or in a salad, I guess. Lol.

  5. I think it’s so funny how guys are all about the pepperoni pizza. Mike is like that too! For leftover ingredients, I like making salads or omelettes like you did :)

  6. Their dough is the best.I have some in my freezer. So creative to use the leftovers as an omlette filling – I bet that came together in a snap!

  9. Publix dough is really good! I also like making the Pioneer Woman’s dough. It’s really easy to work with and makes a very thin crust. We love making out own pizza with fresh mozzarella, oregano, and pizza sauce. I need to branch out and add veggies – yours looks great!
