Today was my first day back to work after a glorious 17 days off, and thanks to the cold front moving through, I just wanted to stay curled up in bed all day. Luckily my work day passed quickly and painlessly, and I can look forward to only having three days of work left in the week.
Yesterday, the Gators victory capped off my wonderful holidays. It truly is a new year when we finally win a game! Kevin even picked me up some “game day” orange flowers when he was grabbing groceries at Publix.

We recently picked up the vase from West Elm, and I’m happy to put it to use. I smile every time I glance at the flowers.
I started my day back to work on a high note: my first ever overnight oats in a jar! I have a new recent love: cashew butter.

I’m not a huge fan of peanut butter (shocking, I know…), but cashew butter is milder and has a great flavor. I used to never be able to finish peanut butter jars, but I went through this container in no time: perfect timing for my first attempt at overnight oats in a jar.
Into the almost empty jar went oats, skim milk and nonfat Greek yogurt.

It was the perfect welcome-back-to-work breakfast, and I already have another new try on deck.

Even though it was great to have so much time off, I do feel like it’s easier for me to eat well when I’m at work because I always pack my breakfast and lunch. When I’m at home, I’m more likely to graze, grab food out and make unhealthy decisions. At work, I usually start out the day with overnight oats, assemble a salad for lunch and have a variety of fruit for my snack, and I’m confined to those items, so the temptation isn’t there. It feels nice to detox a little from the holidays.
What is your favorite nut butter?
Do you eat healthier at home or at work or at school?

I haven’t tried cashew butter. Mainly because I’m afraid. Very afraid. I loved PB too much so I decided to switch to Sunflower Seed Butter. Then I loved that too much and decided to switch to almond butter. Then I loved that too much and well, you can see where I’m going with this. Cashews are my fave nut and I’m pretty sure me trying cashew butter would be a downfall of getting my body fat back down.
I have never perfected overnight oats before. It always turns out watery for me! I hate it. I tend to eat at my apartment the most because my classes always end early so I have time to go back to my apartment to eat. But usually, I eat the healthiest for lunch since I would bring only healthy food with me.
Love the Gators flowers – y’all are so spirited!
I always eat the healthiest at my own house. At my family’s houses, I go nuts with all the delicious options, and at work, I always get tempted by Groupon Now deals and the other awesome things to eat downtown.
So sweet that Kevin bought you flowers! They are beautiful!
That almond butter looks delicious. I’m definitely going to have to check it out the next time I’m in Target. I eat healthier at home definitely but I also try to eat healthy while I’m at work. That isn’t always easy when they provide us with free food.
I love them all – nut butters, that is! I think I eat healthier at home – though it really depends on the day!
You should try Sunbutter! If you’re not too much of a PB fan, it might just be your saving grace
I feel you on the holiday detox. I’ve been trying my best to incorporate greens and healthy foods back in, but once you eat so much chocolate bark, there’s only one thing to crave
Happy New Year!
My favorite nut butter is peanut butter!
Yum, your OIAJ look delicious!
I may have to check those out next time I go to Target!
Peanut butter all the way for me!
My favorite butter has to be Sunflower Butter… soo good. I definitely eat healthier when I’m on a scheduled routine at work. Generally greek yogurt and/or egg whites in the morning and then some sort of salad/soup for lunch.
I love overnight oats during the summer, but prefer hot oatmeal during the winter. Especially when its 15 degrees out when you wake up!
So Archer Farms’s cashew butter is good? Their almond butter is the bomb, too, but I was wary…I need to expand my nut butter repertoire
Have you tried Sunflower Butter? To. Die. For.
I kind of agree on your peanut butter assessment! I am totally obsessed with almond butter, though. Not a huge fan of sunflower butter, but cashew sounds great! I think I actually eat less when I am not at work because I’m out and about more, but I eat healthier at the office for the same reason you noted.
I love Target’s nut butters! They have an almond, cashew, peanut butter that’s awesome.
I haven’t tried cashew butter. I’m cheap, so I generally stick to regular (but natural) pb. It doesn’t hurt that it’s also one of my fav foods.
Aww those flowers are lovely
And haven’t tried cashew butter yet…. going to soon though, I know I would love it! When my current almond butter runs out, cashew is next
I loveeee almond butter. Like you, I’m not a big fan of peanut butter. It just tastes kind of bleh to me.
Aww – love those lillies! Kevin is a keeper! Great post – can’t wait to read more!
Loooove overnight oats in a nut butter jar! I had overnight oats this morning as well
I think I would be hard pressed to ever choose my favorite nut butter…there are just too many good ones! Though sunflower seed butter is probably pretty high up on that list
Believe it or not, I’ve never tried anything but pb and almond butter! Crazy, I know!
I hate peanut butter! I was so happy to see alternatives but it took me over 20 years to discover them! My favourites are almond butter and cashew butter.
Another nut butter I didn’t like was sunflower seed butter. It was a bit too intense for me.
I eat much healthier at home than anywhere else.
