Sundays are great because I feel like I have all the time in the world to prepare dinner. I love cooking for and sitting down to meals with Kevin.
On the menu last night was some comfort food. I was really in the mood for baked ziti. I added ground beef and went light on the ricotta as Kevin likes, and I used whole wheat pasta as I like. It’s a blend of both our preferences.
What a perfect Sunday evening.
Today was the first day that I could feel the days truly getting shorter. When I arrived at the gym after work, it was bright and sunny as usual, but when I left around 7, it felt like dusk had set in. The sun was a lot lower than it usually is when I’m driving home from the gym.
Although I love having the extra daylight, it’s a nice feeling to enter the gym with the sun high in the sky and to leave with it hidden behind the trees on the horizon. It makes me feel like I was at the gym for even longer than I was.
Rumor has it a cold front is sweeping through Central Florida this week. Bring. It. On.
I got my engagement ring back today after having to get it resized. I feel just as excited to have it back as when I first got it. It was a little loose and kept swinging around my finger, so I went down a half size, and now it fits perfectly. It’s still a little loose for when my finger swells, but there’s no risk of it getting past my knuckle. After all was said and done…my ring finger is a size FOUR. Apparently I have baby fingers. But I’m just happy to finally have it back!
I hope everyone’s week is off to a great start. We made it through Monday!
Do you ever have to compromise recipes for those you’re cooking for?
