Since the food truck scene has swept Orlando, I have most anticipated trying the Korean BBQ Taco Box truck. I kept hearing how wonderful it was. At the food truck bazaars, they always had the longest line by far. Their fleet has even recently expanded to four trucks meaning they cover even more of Orlando at a time.
On Saturday Kevin spotted the truck in the Mills50 district, so we took a walk to get me the coveted food.
I ordered the spicy pork taco box, which I have heard is the most traditional and the most popular.
Parko wasn’t nearly as excited as I was while waiting for our food.
We walked home with our food, and I couldn’t get home fast enough. First of all, it was dang hot outside. But more importantly, the food smelled so delicious. Different spices perfumed out of the box making me hungrier and hungrier on our walk.
Finally, we got home, and I couldn’t believe how much food we had gotten for the price.
Inside was one generously sized taco, two fried cheese sushi rolls, a fried tofu block with teriyaki sauce, a chicken drumstick in a spicy glaze and a salad topped with ginger dressing.
I decided to work my way around the sides saving the taco for last. The ginger salad was better than any side salad I’ve had in a Japanese restaurant because it had big slices of onions and the ginger dressing was thick with a lot of flavor. I love when the ginger dressing is more of a paste than a liquid dressing. The tofu and sushi were both mild in flavor and very good. The drumstick was amazing with the perfect amount of spiciness. I was literally licking my fingers.
Finally, I ate the spicy pork taco, and it lived up to all the wonderful things everyone was saying. I wish I had five more. I can’t remember eating anything so flavorful. There were so many different spices and flavors. I have a feeling I’ll be craving this a lot more.
Recently, I’ve wanted to try to get back into running. Running has always been kind of a love/hate relationship for me. I’m just not very fast, and it’s difficult for me to build up distance. Lately temperatures outside have been condemning me to a treadmill and I’ve been so focused on strength training, so cardio has just been an afterthought. I would hop on a treadmill or the StairMaster for a little while just to say I had. But I decided that I didn’t want my cardio routine to slip like my strength routine had in the past, so I’m going to try to build up some running stamina. I know it will be frustrating at first, but hopefully I can still keep things interesting.
After my arms workout today, I tried Brittany’s Beginner’s Running Interval Treadmill Workout. It definitely got me huffing and puffing but in a good way. I’m proud that I completed it, and since I never get up to 6.5 on the treadmill, hopefully I’m getting stronger in the process. I think I need to stay on this level for a little while before trying her intermediate workout!
Any tips to give a much-needed kick in the butt to my running? I think I may start Couch to 5K and see how that goes.

Keep up the great work and I’m sure you’ll be ready for the intermediate workout in no time. Remember, running is one of the HARDEST things to train yourself to do– it took me almost a year to get past 2 miles! Little did I know, I would be running 26.2 miles two years later during my first full marathon!
I’m trying to get back into running too, I’ve been doing the Body For Life workout plan for the last 9 weeks which focuses mainly on strength training and just some cardio. I really like that beginner interval workout! I’ve been building up slowly starting with running just 1 mile and then walking. I’m thinking about signing up for a 5k in September but I haven’t run a race in a loooong time

I’ve heard Couch to 5ks are actually really good so I would definitely recommend that if you want to stick to some sort of a plan. Otherwise I say just go when/if you feel motivated and just do a little at a time

It was GOOOOOD (and SPICY – they were not joking around!).
I’ve heard good things about the C25K program…although I built up my endurance by going to spin classes first! I was ADDICTED to spin (we’re talking 5 times a week) and it really helped build my endurance for other activities.
People ask me all the time about how I got to the mileage that I’m at now (I was seriously a non-athlete — I could even run a mile when I first started running) and it’s all completely mental. You just have to keep setting goals. 10% extra a week is usually a good rule of thumb. You can do it!

My mom is currently doing the C25k and she is really enjoying it so far. It’s great how it builds up the mileage and time you are running quite slowly so that you don’t get frustrated or feel that you are taking on too much

I too have heard great things about Couch to 5K though I never really tried it. I followed Michelle’s rule when I first started, 10% increases to build endurance. I also started with intervals, running for a song, walking for a song (for example) until I got to the mileage I wanted to hit on that run. As I got stronger I decreased the walking time & eventually ran the entire thing.
I’ve heard good things about Couch to 5ks! I’ve had to run my whole life for sports, so I’ve never needed to try it, but it looks like a great starting point. When I take off running for awhile and am really out of shape, I like to do run/walk intervals until I get back into it fully.
